I love to cook, however, I am 25 weeks pregnant we have a 19 month old mischievous toddler running around causing havoc most of the time. So, as you can imagine, I get to about 5pm and I have hit a brick wall. I don’t want to be making fussy food that’ll take me forever to prep and clean up. I want easy. Let me tell you, I don’t just want easy, but I also want mess free, toddler friendly, and above all quick!
Now, this meal isn’t exactly quick in the sense that it’s under an hour. It is however easy and fuss free. Since finding out that we were expecting our second child, I’ve been thinking of every possible way to make my life easier in the kitchen and one of the things I came up with was investing in a slow cooker. I know, I know, you’re probably wondering how on earth a slow cooker is going to help me out – but if only you knew what happened in my first pregnancy you’d understand. (I’ll definitely do a post on both of my pregnancies quite soon.) Anyway, Kayne got me my treasured CrockPot Slow Cooker earlier this year and since then I’ve been trying out all sorts of different meals in it. Much to my satisfaction, it has made my life oh so much easier!
So, back to this chicken pot roast. This recipe is so versatile, you can swap the potatoes for pasta or rice and you will have another two different meals. You can add whichever veg you want, you could even try using different meats. I have tried using beef cuts like brisket, and I really want to try it with lamb. I went to Uni in Wales and I tried their infamous Cawl, loved it, and I do think that this could make a stunning version of it. Anyway, this gives you a lot of broth, so you could turn left overs into a soup (I shredded some chicken and turned it into a soup for Jasper – he loved it!)
- 4 Carrots, peeled & quartered
- 2 Onions, peeled & quartered
- 1 Leek, Sliced
- 200g Green beans, trimmed
- 3 Celery sticks, sliced
- 4 Chicken thighs
- 4 Chicken drumsticks
- 1 Sachet bouquet garni
- 800ml Boiling chicken Stock
- salt and pepper to taste
- 4 large potatoes, cut into eights
- Prepare the vegetables and place them in the bottom of the slow cooker pot. Place chicken pieces on the top, add bouquet garni, chicken stock and season well.
- Cook on LOW for 6 hours.
- Add the potatoes and cook on HIGH for the last 2 hours.
- Remove bouquet garni and serve.
